Roasted Golden Beets Recipe

Golden beets, with their vibrant hue and subtly sweet flavor, offer a delightful alternative to their ruby-red counterparts. This recipe showcases their natural sweetness, enhanced by simple roasting techniques. The result is a tender, flavorful beet that's perfect as a side dish, salad ingredient, or even a unique addition to dips and spreads.

Ingredients:

  • 1 pound golden beets, trimmed and scrubbed
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon balsamic vinegar (optional)
  • Fresh herbs (such as thyme or rosemary), optional

Instructions:

  1. Preheat & Prepare: Preheat your oven to 400°F (200°C). Wash the golden beets thoroughly, scrubbing away any dirt. Trim off the leafy greens, leaving about an inch of stem attached. This helps prevent the beets from drying out during roasting.

  2. Oil & Season: In a large bowl, toss the beets with olive oil, salt, and pepper. If using fresh herbs, add them now.

  3. Roast: Spread the beets in a single layer on a baking sheet. Roast for 45-60 minutes, or until a fork easily pierces the center. Roasting time will vary depending on the size of the beets; larger beets may require slightly longer cooking time.

  4. Cool & Peel: Once roasted, remove the beets from the oven and let them cool slightly. Once cool enough to handle, peel off the skins. This is easily done once the beets have cooled. The skins should slip right off.

  5. Serve (Optional Balsamic Glaze): If desired, toss the peeled beets with balsamic vinegar before serving. This adds a tangy depth of flavor that complements the natural sweetness of the beets.

Serving Suggestions:

  • Side Dish: Serve roasted golden beets as a vibrant side dish alongside roasted meats, poultry, or fish.

  • Salad Addition: Incorporate them into salads for a burst of color and sweetness.

  • Dip Ingredient: Puree roasted golden beets into a smooth dip, adding cream cheese or yogurt for a creamy texture.

  • Garnish: Use roasted golden beet slices as a colorful garnish for soups, stews, or other dishes.

Notes:

  • Storage: Store leftover roasted golden beets in an airtight container in the refrigerator for up to 3-4 days.

  • Variations: Feel free to experiment with different herbs and spices to customize the flavor. A sprinkle of cinnamon or nutmeg can add a warm, autumnal touch.

This simple recipe allows the natural sweetness and earthy flavor of golden beets to shine. Enjoy!
